If I’m going to eat vegetables, breakfast is more often not the first meal I would jump up and down excited to include them in. I have a consistent sweet tooth that simply says “no” to vegetables in the morning. Sound familiar to anyone? So instead, sneak them into breakfast with some of these simple recipes.

Chickpea pancake

Ingredients:

  • 1/2 cup chickpea flour
  • 1/4 cup chopped red pepper
  • 1/2 large onion chopped
  • Handful of spinach
  • 1/2 cup water
  • 1/2 tsp baking powder
  • Garlic added to your taste preference
  • Salt + red pepper
  • Optional toppings (that I highly recommend): avocado, hummus, fried egg

Directions:

  1. Whisk together flour, garlic, salt, pepper, and baking powder
  2. Add water and stir until no clumps in the mixture remain
  3. Add in chopped vegetables
  4. Grease skillet generously
  5. Pour entire batter or smaller portions to create individual pancakes
  6. Cook for about 5 minutes on each side until both are lightly browned
  7. For toppings: use greased skillet to fry an egg until yolk is runny
  8. Layer remaining toppings on chickpea pancake for added flavor

Sweet potato waffle

Ingredients:

  • 1/2 cup sweet potato puree
  • 1 cup rolled oats
  • 1 cup vanilla almond milk
  • 1 whole egg + 1 egg white
  • 1/4 tsp baking powder
  • Pinch of salt
  • Pinch of cinnamon
  • Olive oil cooking spray

Directions:

  1. Turn on waffle iron to preheat
  2. Combine all ingredients and mix rigorously
  3. Once waffle iron is hot, spray liberally with olive oil cooking spray
  4. Pour waffle batter into iron and wait about 3-4 minutes until waffle is completely cooked and lightly browned (this may vary depending on your waffle iron’s heat intensity)

Zucchini muffins

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 egg
  • 1/2 cup pure maple syrup
  • 1/2 cup almond milk
  • 1/4 cup melted coconut oil
  • 1 1/2 cups grated zucchini
  • 1/3 cups rolled oats
  • Pinch of salt
  • 1 tsp cinnamon
  • 1 tsp pure vanilla extract

Directions:

  1. Preheat oven to 350 degrees
  2. Grease 12-cup muffin tin with cooking spray or line cups with paper liners
  3. Mix together all dry ingredients (flour, baking powder, baking soda, cinnamon, and salt)
  4. In a separate bowl, whisk together egg, syrup, milk, coconut oil, and vanilla extract
  5. Add the wet ingredients to the dry ingredients, and stir until combined
  6. Stir in zucchini and oats
  7. Portion batter evenly between muffin tin cups
  8. Bake for 18-20 minutes

Mediterranean breakfast quesadilla

Ingredients:

  • 2 eggs
  • 2 tortillas (approximately 6″ each)
  • 1/2 cup feta cheese
  • Onion
  • 2 tbsp sun dried tomato
  • Black olives
  • Salt + pepper to taste
  • Garlic

Directions:

  1. Grease a skillet and cook eggs (scrambled) over low heat. Remove scrambled eggs and set aside once fully cooked
  2. Using the same greased skillet, caramelize chopped onion. Set aside once onion is soft and translucent
  3. Grease skillet, and layer on tortilla on top
  4. First top the tortilla with about 1/4 cup feta cheese
  5. Add cooked scrambled eggs, sun dried tomatoes, black olives, and onion
  6. Add another light layer of feta cheese
  7. Top off with the second tortilla to create quesadilla
  8. Cook until both sides of the quesadilla are browned and cheese is melting

Mexican breakfast hash

Ingredients:

  • 1 large potato, chopped into cubes
  • 1/4 cup cooked sweet corn
  • 1/4 cup black black beans
  • 1/2 large onion, chopped
  • 1 egg
  • 2 strips of bacon
  • Olive oil or coconut oil for cooking
  • Salt + pepper
  • Chili powder (if you like some spice)
  • Juice of 1/2 lime
  • 1/4 cup cotija or chihuhua cheese
  • Optional toppings: sliced avocado and salsa

Directions:

  1. Grease skillet with oil to cook chopped potato until potato is softened. Set aside
  2. Add chopped bacon to skillet
  3. Add in the cup of cooked sweet corn and onion
  4. Sprinkle on salt, pepper, and chili powder
  5. Remove mixture and set aside
  6. Using the grease from the skillet, crack egg and flip when surrounding egg white is completely white around the yolk. Remove from skillet
  7. Return potatoes back to the greased skillet, add in mixture of veggies and bacon
  8. Squeeze juice of 1/2 lime onto the mixture
  9. Remove entire mixture, and top off with fried egg, cheese, sliced avocado, and salsa
