When in anorexia recovery, I wanted more than anything to NOT have to eat what felt like a million different components of a meal at one time. I wanted as much nutrition packed in the smallest form possible; this helped lessen my anxiety, and somehow tricked my mind into thinking I wasn’t eating as much as I really was. This is where “energy balls” can be such a huge help in recovery when you need an easy on-the-go snack that still fulfills your nutritional needs.

Each recipe can be stored up to one week in your fridge; but, my guess is they will be gone long before the week is over! I would also recommend having 3-4 bites as a small snack!

Pecan pie bites

*Makes 16 bites
Ingredients:

  • 1 cup pitted dates
  • 1 cup honey roasted pecans (or plain)
  • 1 tsp vanilla extra
  • 1/2 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of dried ginger
  • Sprinkle of sea salt

Directions:

  1. Preheat oven to 350 degrees; spread pecans on baking sheet
  2. Roast pecans for about 7 minutes; make sure they do not burn!
  3. Combine the remaining ingredients in a food processor
  4. Add in pecans, combine thoroughly
  5. Roll into 16 balls
  6. Freeze for 15 minutes
  7. Store in fridge

Carrot cake bites

*Makes about 18-20 bites
Ingredients:

  • 1 cup almonds
  • 1/2 cup golden raisins
  • 15 pitted dates
  • 1 cup unsweetened shredded coconut
  • 1 cup grated carrot
  • 1 tsp ground cinnamon
  • 1 tsp nutmeg
  • Pinch of salt

Directions:

  1. Mix together almonds, raisins, and spices in a food processor until well mixed
  2. Add pitted dates, followed by carrots and coconut
  3. Roll mixture into about 18-20 bites
  4. Freeze for 15 minutes
  5. Store in fridge

Peanut butter bites

*Makes about 15 bites
Ingredients:

  • 12 pitted dates
  • 3 tbsp all natured peanut butter or almond butter
  • 1/4 cup dark chocolate, chopped
  • 1 tbsp chia seeds
  • 2/3 cup rolled oats

Directions:

  1. Pulse dates in a food processor
  2. Add in oats, chocolate, chia seeds, and peanut butter
  3. Roll into 1 inch balls (about 15)
  4. Freeze for 15 minutes
  5. Store in fridge

Blueberry muffin bites

*Makes about 20-25 bites
Ingredients:

  • 1 cup cashews + 1 cup almonds
  • 1 cup pitted dates
  • 1 cup dried blueberries
  • 1 1/2 tsp pure vanilla extract
  • Juice of 1/2 large lemon
  • Pinch of sea salt

Directions:

  1. Add nuts to food processor and pulse for about 20 seconds
  2. Add in dates and dried blueberries; pulse until mixture becomes sticky
  3. Add in lemon juice and vanilla extract
  4. Pulse until all ingredients form a large stick ball
  5. Roll into about 20-25 balls
  6. Freeze for 15 minutes
  7. Store in fridge

Banana oat bites

*Makes about 20 bites
Ingredients:

  • 2 very ripe bananas
  • 2 cups rolled oats
  • 1/2 cup peanut butter or almond butter
  • 2 tbsp honey
  • 1/2 tsp cinnamon
  • 1 tsp flax or chia seeds

Directions:

  1. Mash up bananas
  2. Stir in the remaining ingredients until combined
  3. Roll out mixture until about 20 bites
  4. Freeze for 15 minutes
  5. Store in fridge

Chocolate almond bites

*Makes about 15 bites
Ingredients:
  • 1 1/2 cups old fashioned oats
  • 1/2 cup almonds
  • 1 and 1/2 tbsp unsweetened cocoa powder
  • 1 tsp pure vanilla extract
  • 1/4 cup honey
  • 1/2 cup almond butter
  • 1/2 cup mini dark chocolate chips

Directions:

  1. Add oats in a food processor and pulse until it looks like flour
  2. Place in separate bowl
  3. Add almonds into food processor and pulse until it looks like flour
  4. Mix almonds and cocoa powder with the pulsed oats
  5. Add in vanilla, honey, almond butter, and mini chocolate chips
  6. Stir together with your hands until a dough forms
  7. Cover the mixture and store in fridge for about 20 minutes
  8. Remove from fridge and roll into about 20 bites
  9. Store in fridge
